My KitchenAid refrigerator (Model: KSCS25INBL01) is not cooling properly due to ice buildup on the evaporator coils.  I unplugged it and allowed all the ice to melt so I could test the heater coil & defrost thermostat.  Heater coil showed continuity, yet for the defrost thermostat, all the videos I have watched say to cut the two wires and splice in a new thermostat.  That seems to be a waste when the defrost thermostat may not be the problem.  I tried to unplug the entire wire harness from the back wall just above the evaporator coils, but I could not figure out how to separate it (See attached photos).  If I can get it off, I could put my multi-meter probes in the appropriate ports & test for continuity after freezing the thermostat in another freezer.  If this wire harness plug on the back wall is not designed to separate--let me know & I guess I'll have to cut the wires and if nothing is wrong with the thermostat; I'll just splice it back on?

Once the ice is thawed does it cool properly for a few days anyways?
Also, does the ice build up heavy towards the top of the evaporator or does it build up evenly covering the entire evaporator?
The T-stat should have a cut in and out temp on it such as 45-70 meaning the t-stat is closed at 45 F and once temp from the defrost heater reaches 70 F the t-stat will open cutting the defrost heater off.. If you can test it while it is submerged in some ice you should have continuity meaning the t-stat is closed, if not the t-stat is bad and needs replaced.

Testing the defrost thermostat is what I'm trying to do, as I mentioned in my original post.  To make that easier, without cutting the defrost thermostat wires, I was hoping to remove the entire wire harness plug on the back wall.  That is becoming extremely difficult and I'd like to know if it is designed to separate there?  I don't want to break anything!  I may be able to set the defrost thermostat in ice water & get my multi-meter probes in the slots of the wire harness plug, but I'd feel more confident if I could remove the plug & take the reading with it entirely removed.  I could also then put it in another freezer to guarantee dropping the temperature below 15 degrees.  The marking on the defrost thermostat is L7.4 - 15.2 C.  I believe that means the heater would come on at about 18 F and cut off at 45.3 F. It also looks good physically--no bulging anywhere.  Once I can get a test on the defrost thermostat, I will plug it in and see how it does for a few days.  If you could, please address my previous question?

I always just use the prongs on my meter and stuck those into the plug directly.. they should make contact with the metal part of the t-stat prongs.. you likely would not break anything doing this.
