Well I am out of ideas.. I am hesitant to say its the control board because there are methods to test that control board but I dont have any info on that.

I was talking to my wife and we both have agreed that we have always caught the thing as it misbehaves. So, my question is, would there be flashing error lights after the cleaning cycle should be done or would the error lights occur while the problem is happening?

Yes, when it shuts down you should have at least one light blinking or flashing signifying what the error is. Most say when this doesnt happen it is likely the control board.. I hate to suggest that because I really dont know if there is nothing that says for sure this is the case.
Can you confirm that the heating element is working? That would be the only other thing I can think of .. if it fails it could stop mid cycle but there should still be a flashing light.

The heating element is definitely working. Yesterday I heard the detergent door open so I checked if there was water in the machine by pouring some in. There wasn't any water and the water I poured in sizzled when it hit the heating element. Now, for clarification (if that is even possible with this!!!) it usually does fill with water when it misbehaves, but not always.

Yes, it looks as though you can remove the control panel cover and get to it that way.. in most cases dishwashers will not have to be removed to perform repairs.

I got a new control board and that made no difference! I guess that was a $100 I didn't need. So, I looked online about testing the heater element. Pulled the machine out and the element checked in at 11ohms. Then I looked online about thermostats. One man on youtube pulled his thermostat and it would test fine, but since he had already ordered a new one, he replaced it and it cured his dishwasher. So, I looked online about testing one to see if it works. One site said to put it against a heat source and see if the circuit opens. So I put it against the element on our electric stove. I thought this thing is getting hot! When I was about to give up, there was a loud thunk from it and the circuit opened! Maybe it needed a little friendly persuasion to get working? I put it back in and, so far, the machine is behaving. I ordered a new thermostat and will replace it in time. Maybe when the weather settles down and these old bones aren't complaining so much!

I guess the lesson is that to check a thermostat, it needs to be pulled irregardless to see if it actually functions. I hope this will work for me. It still is a good machine and spending $500+ for an equivalent isn't something I really want to do.
